Since 2003 I have been creating Wedding Cakes and Favours, Chocolate Sculptures and Fresh Chocolates and Truffles from my kitchen in mid-west Cornwall.
I combine my design skills in sugar and chocolate craft with some of the best local ingredients such as Cornish cream, butter and eggs, wildflower honey, fruit and Cornish Seasalt (used in my award winning Caramel) to create some of the most sought after cakes and chocolates in the country. My fresh chocolate range is made without preservatives and additives, emphasising subtle flavour blends, textures and mouth feel. My cakes and sculptures are hand delivered from Lands End to London and my chocolates are available online and at selected collaborations such as the Eden Project.
My philosophy and working practices
Working with chocolate
I have a strong belief that everything that I produce is hand-made, that is to say without the use of machines that automatically temper, mould, enrobe or cool chocolate. This adds a personal touch to each item that I produce, so that each one is different in some way. Each cake pop, chocolate sheep lolly, every Wedding Favour is hand piped and individually wrapped with care and thought.
Preservative and additive free
One of the philosophies we have embraced at Nicky Grant Chocolate is to never use artificial preservatives and additives to extend the shelf life of our fresh chocolates. Indeed the term fresh chocolate is often used to describe those truffles filled with ganaches, caramels, jellies and pralines that contain just the raw ingredients. So for example when we make our ganaches we will simply use fresh whipping cream (or some other fluid such as raspberry puree) with chocolate, perhaps some quality butter and of course whatever flavour combination we decide to bring in. In our lime and chilli we will infuse them both in whipping cream before straining the cream into the chocolate to make the ganache.
It is our strongest belief that by keeping preservatives out of the recipe, the purity and fullness of the fillings flavour and with that the chocolate it is coated in is truly realised.
