dark chocolate shards with ginger A selection of chocolate shards including cocoa butter infusions with herbs, spices and flowers. The cocoa butter infusion is left to solidify for a few days before being added to the chocolate. This ensures a unique flavour quality, in for example, the Chilli dark chocolate as compared to simply just adding the chilli to the chocolate. I also blend the chocolates with other ingredients such as nuts, dried berries and crystallised fruit.
